How am I just now discovering zucchini noodles?! #gamechanger![]()
Ingredients:
1 zucchini 1 yellow squash (or another zucchini) 13 medium shrimp 1.5 Tbs extra virgin olive oil 1 tsp garlic powder 1 tsp parmesan 1 tsp lemon pepper seasoning (not shown) ![]()
Directions:
Spiralize squash and zucchini (I used a veggetti) Saute shrimp in a non-stick pan until done (I didn't use any sprays or oils) Saute veggie noodles in a non-stick pan on medium heat for 3-4 minutes or untli tender (I used a light coating of EVOO) Mix together and coat evenly with sauce. ![]()
Special Sauce:
1.5 Tbs EVOO 1 tsp grated parmesan cheese 1 tsp garlic powder 1 tsp lemon pepper seasoning Stir and evenly coat pasta And DONE! About 10 minutes of total cook time and only 380 calories in the entire bowl. Enjoy!
